Cilantro Dill Coleslaw

Ingredients
Dressing
- ½ cup mayonnaise
- 1 Tbsp apple cider vinegar
- 1 Tbsp mustard
- 1 Tbsp honey
- ¾ tsp dill seed
- Salt + pepper
Salad
- 2-3 cups shredded cabbage
- ½ cup grated carrot
- ¼ cup minced fresh dill
- ¼ cup minced fresh cilantro
- ¼ cup thinly sliced onion
Instructions
Combine the dressing ingredients in a mixing bowl and whisk together, then add the vegetables and herb. Chill for about an hour before serving. Toss before serving.
Recipe Notes
I’ve made this recipe and slight variations several times. Substitute dill seed for celery seed. Substitute or omit herbs altogether. Teddy says this tasted “plain”, although it was served with Oven Ribs and Spicy Red Chile Sauce so it’s meant to be more of a complement than a main attraction. The mayo to vinegar ratio could be adjusted to give this more acidity.
Rating
This is a decent recipe that I will continue to use in my repertoire, but I have other slaw recipes that are true crowd-pleasers.
