Ingredients

  • 4 lb. pork loin (baby back) ribs
  • ½ cup brown sugar
  • 2 Tbsp smoked paprika
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp salt
  • 1 Tbsp ancho chile powder
  • 2 tsp cumin
  • 1 tsp chipotle chile powder
  • 1 tsp black pepper

Instructions

    Rinse and dry ribs. Remove membrane on underside. Pack on dry rub on both sides, chill for 1 hour or more. Preheat oven to 275°. Bake on sheet pan covered tightly with foil for two hours or until fork tender. Brush with barbecue sauce, broil for 5-10 minutes uncovered.

Recipe Notes

Ribs come out surprisingly tender. I personally would prefer more spice on the dry rub and might use cayenne next time. I pulled the meat off the bone the next day and made pork bowls with brown rice, green onions and some leftover spicy red chile barbecue sauce.

Rating

We did thoroughly enjoy this meal. Oven ribs will do in a pinch, but when are you in a pinch for ribs? While the practical use for oven ribs is questionable, this option is good for meal variety with plenty of inactive cooking time. The next time I see a deal on pork ribs maybe I’ll make it again. The smoke from a grill or smoker is missed, so sauce options were appreciated. Would be good with some quick pickled red onion.
