A Tale of Two Sauces

Classic Barbecue Sauce vs. Spicy Red Chile Barbecue Sauce

Image

Classic Barbecue Sauce Ingredients

Makes roughly 1 cup of sauce

½ cup ketchup

¼ cup apple cider vinegar

¼ cup brown sugar

2 tsp smoked paprika

¼ cup molasses

1 Tbsp worcestershire sauce

1 tsp garlic powder

Salt + pepper

Recipe Notes

Simmer 15 min or until combined and slightly thickened.

Classic flavor, perfect texture, better than bottled. A good basic barbeque sauce, but the spicy sauce was preferred over this one. Will make again or use as a base for other flavors.

Rating

4.5 wines! Classic flavor, a definite keeper. Why buy bottled sauce?

Spicy Red Chile Barbecue Sauce

Makes roughly 1 cup of sauce

*Requires Mexican Red Chile Sauce

½ cup red chile sauce

¼ cup brown sugar

1 Tbsp apple cider vinegar

1 Tbsp molasses

1 Tbsp olive oil

1 tsp cumin

1 tsp red chili flakes

Plain water or red chile cooking water to thin out, approx. 2 Tbsp

Recipe Notes

Simmer 15 min or until combined and slightly thickened

A “chunky” sauce with lots of spicy, sweet and smoky flavors. I added oil to give the sauce a lingering heat, akin to Chinese chili oil. This sauce was a clear winner in our house, and next time, I may work on ways to improve the texture, including thinning the chile sauce before adding, or dissolving the sugar before adding to the pot.

Rating

4 wines - excellent flavor, but the texture needs work.
