Preheat oven to 350°. Melt the chocolate chips with the water in a small microwave safe bowl on 50% power for one minute. Stir and repeat until chips are completely melted. Cream butter and sugar in a mixer or mixing bowl. Add eggs, salt and vanilla. Add melted chocolate and mix vigorously to combine. Mix remaining dry ingredients, (flour, cocoa powder, baking soda) and slowly incorporate into the wet ingredients until combined. Chill for an hour. Use a large cookie scoop to make evenly-sized cookies. Dough will spread, so only place six or so on a cookie sheet at a time. Push orange-colored peanut butter pieces (Reese's Pieces) into each cookie. Bake for 11 to 12 minutes or until tops are cracked and starting to set. Cookies will be soft, allow to cool completely before transferring to a platter for serving.

Recipe Notes

This cookie dough comes out very soft for me - it’s hot in California in October so the hour of chill time may not be necessary for everyone. It’s possible to make this cookie a slice-and-bake, but you may have a difficult time rolling it into a cylinder. If your dough is too firm right out of the fridge, let it sit on the counter for a bit, it will soften up quickly. Since these cookies spread out quite a bit, you can add some additional Reese’s Pieces right after the cookies come out of the oven, while they are still warm and pliable. Simply press them in. The cookies keep well in the refrigerator.

You know how the corner of a pan of brownies can get crumbly and crunchy? These cookies remind me of that - right out of the oven they are soft and gooey on the inside, and when chilled, they are crunchy and chocolatey, just like a brownie corner. The orange Reese’s Pieces give this double-chocolate cookie a Halloween candy crunch.
